Ingredients: Dates – 120 gms Cherry – 60 gms Gold Raisins – 60 gms Black Raisins – 60 gms Tutti frutti – 60 gms Orange juice – 200 ml Nut meg – ½ tsp Cinnamon stick – ½ tsp Green cardamom –3 Eggs – 3 Sugar – 125 gms for caramel, 120 gms powdered sugar for cake batter Melted butter – 180 ml Vanilla essence – 1 tsp All-purpose flour – 360 gms Baking powder – 1 tsp Baking soda – ½ tsp Cashew nuts – 60 gms Preparations: Soaking fruits in orange juice 1) Take 200 ml orange juice in a bowl, add chopped dates, cherry, gold raisins, black raisins and tutti frutti. 2) Soak them for 6 hrs or overnight Caramel preparations: 1) Add 125 gms of sugar in thick bottomed kadai, melt it on low flame 2) Once melted completely, add 250 ml boiling water (while adding water, it will sizzle, so maintain some distance from kadai) 3) Allow it to boil, till the caramel thickens 4) Switch off the flame, add few drops of lemon juice to prevent crystallisation 5) Allow it to cool Cake mould: 1) Place a butter paper in the cake mould. Cake batter preparation: 1) Into a mixer jar, add 3 eggs, 120 gms sugar, nut meg, cinnamon stick, green cardamom (preferably spice can be powdered separately). Blend them 2) Now add melted butter, vanilla essence, pinch off salt, sugar caramel and blend them 3) Add All-purpose flour, baking powder, baking soda and blend them 4) Take the batter into a bowl and add soaked fruits, chopped cashew nuts, mix well Vessel preheating: 1) Add salt into a thick bottomed vessel, add salt in it, place a lid in reverse order 2) Close this vessel with lid, heat it on low flame for 10 mins Procedure: 1) Add cake batter into the cake mould, tap it 4-5 times 2) Add some cashew nuts and black raisins on the top of the batter 3) Place it in preheated vessel 4) Cover it with lid, cover it with thick cotton cloth 5) Cook on low flame for around 1 hour (insert a knife to check, it should come out clean, once done) 6) Take the cake mould outside, cover it with cotton cloth, allow it to cool completely 7) Demould the cake and enjoy Note: If you don’t have a measuring cup, regular teacup will be approximately 100 ml (100 gms) Music: https://www.bensound.com/royalty-free-music #vitaceaekitchen #plumcake #christmasplumcake #christmasplumcakewithoutoven #howtomakeplumcakewithoutoven #howtomakechristmasplumcake
