HEALTHY AMARANTH LEAVES TOMATO CURRY |

Ingredients:
Amaranth leaves – 6 bunches
Tomato – 6
Onion – 1
Groundnut oil – 1 tbsp
Cumin seeds – ½ tsp
Turmeric powder – ¼ tsp
Ginger garlic paste – 1 tsp
Red chilli powder – 1 tsp
Table salt – 1 tsp
Coriander powder – 1tsp
Procedure:
1) Heat oil in a pan, add cumin seeds, let them splutter
2) Add onion, fry on medium flame for 3 mins
3) Add ginger garlic paste, fry on low flame for 2 mins
4) Add turmeric powder, mix well
5) Add amaranth leaves, give a mix, cook on low flame for 15 mins (do not cover with lid)
6) Add tomatoes in the centre, cover tomatoes with amaranth leaves
7) Cover and cook on medium flame for 5 mins
8) Add red chilli powder, table salt on tomatoes, mash the tomatoes with ladle.
9) Mix them well
10) Cover and cook on low flame for 5 mins
11) Add coriander powder, mix well, cover and cook on low flame for 5 mins
12) Healthy amaranth leaves tomato curry can be served with rice or chapati.
