Ingredients:
Bottle guard – 1 (medium size)
Onion – 1 (big)
Tomato – 1 (big)
Groundnut oil – 3 tbsp
Cumin seeds – ½ tsp
Ginger garlic paste – ½ tsp
Turmeric powder – ¼ tsp
Red chilli powder – 1 tsp
Rock salt – 1 tsp
Coriander powder – 1 tsp
Procedure:
1) Heat oil in a pressure cooker, add cumin seeds
2) Let them splutter
3) Add onions, fry on medium flame till they turn light brown color
4) Add ginger garlic paste, fry on low flame for 2 mins
5) Add tomato, turmeric powder, mix well
6) Cover and cook on medium flame for 5 mins
7) Add red chilli powder, rock salt and mix well
8) Cover and cook on low flame for 3 mins
9) Add bottle gourd pieces, mix well
10) Cover and cook on medium flame for 5 mins
11) Pressure cook on medium flame for 4 whistles
12) Switch off the flame, allow it to cool and release the pressure
13) Add coriander powder, finely chopped coriander leaves, mix well
14) Cover and cook on low flame for 3 mins
15) Healthy and tasty bottle gourd curry can be served with rice or chapati
