Ingredients:

Rice – 200 gms Moong dal – 200 gms Groundnut oil – 2 tbsp Mustard seeds – 1 tsp Dry chilli – 2 Onion – 1 Beans – 4 Carrot – 2 Green peas/ Matar – 4 tbsp Coriander leaves – ½ bunch Curry leaves – 1 sprig Ginger garlic paste – ½ tsp Rock salt – 1.5 tsp (or as per taste)

Procedure:

1) Heat oil in a pan, add mustard seeds, dry chilli 2) Add onion, beans, carrot, green peas/ matar, coriander leaves, curry leaves 3) Cover and cook on medium flame for 3 mins 4) Add ginger garlic paste, fry on low flame for 2 mins 5) Add turmeric powder, mix well 6) Add rice, moong dal with 800 ml water 7) Add rock salt, cover and cook on high flame till it roll boils 8) Now, cover and cook on low flame till water is absorbed 9) Healthy vegetable kichadi can be served hot. Note: If you don’t have a measuring cup, regular teacup will be approximately 100 ml (100 gms) #vitaceaekitchen #kichidi #vegetablekichidi
