Ingredients:
Turdal – 150 gms
Ground nut oil – 2 tbsp
Shallots – 6
Carrot – 1
Bottle gourd – Half piece of medium bottle gourd
Tomato—2 (Big)
Turmeric powder – ¼ tsp
Red chilli powder – 1 tsp
Rock salt – 2 tsp
Sambar powder – 2 tsp
Tamarind – 1 big lemon size
Ingredients for tempering:
Groundnut oil – 2 tbsp
Garlic cloves –6
Mustard seeds – 1 tsp
Cumin seeds – 1 tsp
Red chilli – 2
Curry leaves – 1 sprig
Preparations:
Tamarind juice
1) Soak tamarind in 250 ml water for 30 mins
2) Squeeze the juice and keep aside
Cooking dal
1) Take turdal in a pressure cooker, add 250 ml water
2) Pressure cook on medium flame for 3 whistles
3) Allow it to cool, release the pressure
4) Mash the dal and keep aside
Procedure:
1) Heat 2 tbsp oil in a pan, add shallots, carrot, bottle guard, tomatoes, turmeric powder
2) Mix well, cover and cook on medium flame for 5 mins
3) Add red chilli powder, rock salt, mix well
4) Add mashed dal, tamarind juice, 750 ml water
5) Add sambar powder
6) Cover and cook on medium flame for 15 mins
Tempering:
1) Heat 2 tbsp oil in a pan, add garlic cloves
2) Fry on low flame till they turn light brown color
3) Add mustard seeds, cumin seeds, red chilli
4) Fry on low flame for 30 sec
5) Add curry leaves, mix well
6) Add this tempering to sambar
7) Boil the sambar on medium flame for 5 mins
8) Healthy mild sambar is ready to serve with rice
Note: If you don’t have a measuring cup, regular teacup will be approximately 100 ml (100 gms)
